Meal 1: Big Fat Burritos and Cumin Roasted Sweet Potatoes

Get the chill out of the burritos with a quick zap in the
microwave.  Heat the burritos on a cookie
sheet at 325° for 15- 20 minutes until the tortilla crisps and the interior is
warmed.  Serve. Alternately, pan fry them
in a generous helping of fat over medium high heat.  Start with the seam side down and rotate to
each side until deeply browned on all sides. 
Less than 1 minute per side.  This
is messy and indulgent but produces a stove top chimichanga that is pretty
killer.

Heat some butter in a sauté pan over medium heat.  When hot, add the sweet potato and toss to
coat evenly and allow to heat through.
Meal 2:  Winter Squash
Dal, Curried Kidney Beans and Lentils, Biryani
                        ·        Heat
the curries gently.
                             ·        Heat
a generous portion of butter in a sauté pan. 
When hot, add the rice                  and toss to heat through and dress evenly.  Serve the curries atop the rice.
