Meal 1: Winter Squash Pasta e Fagioli, Spelt-Semolina Loaves,
Mixed Greens Salad.

Heat the stew gently.
·
Warm the bread.
·
Dress the salad.
Meal 2: Cannellini Bean Florentine
w. Braised Grass-Fed Beef or Morel Ragu, and Polenta Squares.

NOTE:
the portions of polenta are separated by parchment paper. remove before preparing.

Heat the beef and its sauce gently in a sauce
pan. Lid and allow to heat through. Do not allow to scorch. Heat the morel ragu
gently. Ladle atop the heated bean dish to serve.

Either pan fry the polenta squares in
a little butter or heat on a buttered baking sheet for about 10 minutes at 350°.
If you pan fry them you should likely
cut the large portion into smaller, more manageable pieces. Turn once while
cooking.
·
Heat the beans and their sauce with
spinach in a saute pan to heat through.
Do not let the spinach overcook.
Serve the beef/ mushrooms atop the bean dish.
