Pumpkin Pasta e Fagioli and Braised Beef w/ Cannellini Florentine

Meal 1: Winter Squash Pasta e Fagioli, Spelt-Semolina Loaves, Mixed Greens Salad.
·        Heat the stew gently.
·        Warm the bread.
·        Dress the salad.


Meal 2: Cannellini Bean Florentine w. Braised Grass-Fed Beef or Morel Ragu, and Polenta Squares.
·        NOTE:  the portions of polenta are separated by parchment paper.  remove before preparing.
·        Heat the beef and its sauce gently in a sauce pan.  Lid and allow to heat through.  Do not allow to scorch. Heat the morel ragu gently. Ladle atop the heated bean dish to serve.
·        Either pan fry the polenta squares in a little butter or heat on a buttered baking sheet for about 10 minutes at 350°.   If you pan fry them you should likely cut the large portion into smaller, more manageable pieces. Turn once while cooking.

·        Heat the beans and their sauce with spinach in a saute pan to heat through.  Do not let the spinach overcook.  Serve the beef/ mushrooms atop the bean dish.
