Fried Rice and Escarole Soup

Meal 1: Fried Rice, Baked Tofu, Stir Fried Napa Cabbage in Miso Sauce .
·     Warm the tofu in the oven or toaster 7- 10 minutes.
·     Heat some oil in a non stick pan to just about smoking.  Add the rice and stir once or twice.  Allow to fry a minute or so.  Stir and fold but do not toss.  Allow the heat through and brown up a bit, stirring every so often. 2-4 minutes total.  Larger shares should work in batches.
·     Wipe out and reheat the pan with a little oil.  Carefully add the cabbage and its sauce.  Stir and fold once or twice.  It is done when the cabbage has wilted and the sauce thickened a bit - about 2 minutes.

Meal 2: Chicken or Chick Pea and Escarole Soup, Whole Wheat- Fennel Loaves, Blue Moon Salad

·        Warm the soup gently
·        Warm the bread.
·        Dress the salad.
