Meal 1: Roasted Eggplant Cannelloni w/ Fresh Tomato Sauce,
Barley-Flax Bread, Frissee and Escarole Salad .
· Warm the cannelloni briefly in the microwave. Remove the lid and warm the sauce too. Pour the sauce out on top of the cannelloni
and heat at 350 for 12-20 minutes in the oven to heat through. Serve with a little grated Parm on top if you
like .
· Warm the bread.
· Dress the salad.
Meal 2: Thai Curried Eggplant w.
Sweet Potato Noodles and Cucumber and Sweet Corn Salad

Bring some salted water to a
boil. Plunge the noodles for 1-2 minutes
to heat through and turn from opaque to transparent. Drain and transfer to a serving bowl.

Heat the curry gently. Serve atop the
noodles.
·
Serve the salad chilled. Tear up the thai basil teaves, fold all
together, season with fish sauce if you like, and serve.
