Two in Tubes - Cannelloni and Enchiladas

Meal 1: Asparagus and Green Garlic Cannelloni w/ Marinara Sauce, Semolina Loaves, Salad of Blue Moon Head Lettuce.
·     Give the cannelloni a quick zap in the microwave.  Heat the sauce and top the canneloni with the sauce.  Heat in the oven 10-15 minutes ( keep your eyes on them!) at 350° to finish.
·     Warm the bread.
·     Dress the salad.

Meal 2: Beef and /or Spinach Enchiladas in Ranchero Sauce over Spanish Rice w/ Refried Pinto and Kidney Beans,
·        Honestly, the enchiladas will heat best in the microwave, but finish for about 10 minutes in the oven at 350° to crisp the edges and set the sauce.
Heat the beans in the microwave too, stirring a couple times to heat evenly. A purist can use and clean a sauce pot if they so desire.
