Veggie Enchis and Roasted Onion Bisque

Meal 1: Vegetable Enchiladas & Adobo Black Beans
·        Heat the enchis in the microwave to get the chill out.  Zap the sauce too.  Pour out the sauce and spread upon the enchiladas, though you don't have to 'coat' them.  The exposed tortilla edges will crisp nicely. Heat in a 375° oven 10 -15 minutes depending on share size.
·        Heat the beans and serve alongside the enchiladas.
·        Garnish with yogurt etc.

Meal 2: Roasted Onion Bisque, Snug Haven Spinach Salad, Flax-Semolina Loaves
·        Warm the soup gently. It is dairy free F.Y.I.
·        Warm the bread.

·        Dress the salad.
