Red Lentil Soup and Mac'n'Cheese
Meal 1: Red Lentil Soup,Spiced Flatbreads, Sweet Potato w/ Cumin
• Warm the stew gently.
• Toast the flatbread.
• Melt some butter and or olive oil in a saute pan. Add the sweet potato when almost hot and saute to coat and heat through. Stir for a few minutes and allow to heat through and the cumin to get fragrant. Add butter if necessary and serve.
Meal 2: Mac'n'Cheese, Snug Haven Spinach Salad, Three Bean Salad.
• Heat a scant 1/2 cup of milk per share in a saute or sauce pan. When warm, add the mac'n'cheese and stir. Allow to warm through and become creamy. Garnish with the breadcrumbs and serve. If you use water instead, be sure to adjust the seasoning w/ S & P.
• Tear up the spinach and dress the salad.
• Add salt and pepper to the TBS and toss it before serving at room temp.
