Equinox Stew and Enchiladas

Meal 1: Poblano and Black Bean Enchiladas, Yellow Rice, Frissee w/ Chick Peas. 

• Zap the enchiladas in the microwave for a minute or two to get the chill out of the dish. Finish in the oven at 325 for 20 -45 minutes depending on share size. Serve when hot, bubbling along the edge and cheese is beginning to brown. 
• Heat the rice in a saute pan with a little oil and then a splash of water to heat the dish through. 
• Toss and dress the salad. 

Meal 2: Equinox Stew, Challah Knots, Lacinato Kale w/ Roasted Apples.

• Heat the Stew. 
• Warm the bread. 
• Saute the kale with the apples and onions in a little olive oil or butter until just wilted. Serve immediately.
