BFB and Eggplant Stromboli

Meal 1: Big Fat Burrito and Romaine Salad
 • Place the burritos seam side down and microwave briefly to get their chill out - 1-2 minutes. Transfer to a baking sheet and bake at 325 for 15 minutes or until hot though, and the tortilla has crisped.
    Dress and serve the Salad

Meal 2: Roasted Eggplant Stromboli, Chic Pea and Green Bean Salad, Golden Beet Salad. 
• Heat the stromboli at 325 for 10-15 minutes or until warmed. Test the interior with a knife tip or a skewer. • Serve the salads at room temp. The beets will need to be tossed and seasoned.

 Menu Notes 
 The BFBs are filled with roasted corn, black beans, cilantro pesto, onions, kale, and some roasted pork. Golden beets! pretty cool huh?
