Carrot-Ginger Soup and Spinach Curry

Meal 1: Carrot-Ginger Soup, Soba Noodle & Edamame Salad, Snug Haven Spinach
• Warm the soup.
• Serve the noodles at room temp.
• Dress and serve the spinach as salad or sauté it briefly in a little oil. Season with S&P or a splash of soy sauce.

Meal 2: Spinach and Potato Curry, Brown Lentil Dal, Brown Basmati w/ Herbs
• Remove the spinach from the top of the yellow curry. It is not necessary to get it all. Heat the curry through, you can thin it a bit with water. Add the spinach immediately before serving and stir to incorporate.
• Heat the dal.
• Heat the rice in a sauté pan with a little oil and then a splash of water to heat through.
• Serve the curries atop the rice.
