Meal 1: Roasted Corn and Sweet Pepper Enchiladas, Baked Black Beans, Quinoa Salad
• Warm the enchiladas and beans in the oven at 325 for about 20 minutes, or until hot. The top of the enchis will crisp a little. Top with cheese of you like or drizzle with yogurt when out of the oven.
• Serve the quinoa at room temp.

Meal 2: Three Sisters Soup, White Whole Wheat Knots with Amaranth, Quinoa, and Hemp Seeds, Red Leaf and ‘Candy’ Pepper Salad.
• Warm the soup.
• Warm the rolls in the oven.
• Dress the salad.
