Grilled Zucchini Thajine and Super Salad w. Fennel Bisque

Meal 1: Grilled Zucchini Thajine, Grilled Flatbread, Hummus w. Garlic Scape Pesto

  • Heat the stew gently allowing to heat through.
  • Lightly toast the flatbread to soften and warm it.
  • Serve the hummus chilled.  Garnish with a little olive oil and stir to combine the flavors.

Meal 2: Super Salad of Frissee, Chevre, Roasted Sweet Corn, Kidney Beans, Dried Sun Gold Tomatoes, and Bacon Bits,  Pink and Purple Pickle, and Fennel Bisque.

·        The soup is great chilled or warmed lightly.
·        Serve the pickle chilled.
·        Assemble the salad as you wish in a large serving bowl, or in individual bowls.
