Soba Noodle Hot Pot and Spinach Enchiladas

Meal 1: Soba Noodle Hot Pot w. Baby Bok Choi and Tat Soi, Tofu Salad
  • Heat the broth to a gentle simmer.  Add the noodles and other garnishes.  Allow to heat through a minute or two and serve.  A
  • Serve the tofu slald at room temp.  Toss before serving.

Meal 2: Refried Bean and Spinach Enchiladas w. Ranchero Sauce and Hominy Succotash w. Sweet Potato and Pea Shoots
  • Warm the ranchero Sauce. Get the chill out of the enchiladas with a zap in the microwave.  Then top with the sauce and  bake at 15 - 25 minutes depending on share size, or until heated through.
  • Heat a little butter or oil in a sauté pan and add the succotash.  Sauté and heat through allowing the pea shoots to wilt and the other ingredients to heat through.  Check the seasoning and serve.
