Big Fat Burritos and Southern Style Pasta e Fagioli

Meal 1: Big Fat Pumpkin Burritos, Blue Moon Head Lettuce Salad.
·        Give the burritos a quick zap to get the chill out.  heat through at 325 for 10 -15 to toast the shells and heat up.  Alternately, after microwaving lightly, pan fry in a liberal amount of fat starting with the seam side down. A Cast iron skillet works great for this.  Cook 2-3 minutes to brown. Rotate 90 degrees and progressively toast in fat on all four sides.  It's like a stovetop chimichanga. It will ruin you on regular burritos.
·        Dress and the salad.
·        Go trick-or-treating.


Meal 2: Southern Style Pasta e Fagioli w. Black Eyed Peas, Collards and Macaroni, Yeasted Corn Bread, Beets and Herbs in Buttermilk.
·        Warm the stew gently. Serve when hot.
·        Warm the cornbread in the oven or cut into thick slabs and fry in too much butter to brow each side.  Too good to be allowed.

·        Fold and season the beets. Enjoy the aroma of some of the years last fresh, aromatic herbs.
