Reggae Country Style Potato/Pea Cakes and Sweet Potato-Corn Chowder

Meal 1: Reggae Country Style Potato & Pea Cakes with Black Beans and Jerk Rice.
·        Warm the potato cakes on a cookie sheet in the oven at 325 for 15 minutes or so, OR, pan fry them carefully in a good skillet over medium heat.  Garnish with yogurt or sour cream - they are a bit spicy.
·        Warm the beans. Serve overlapping the rice.
·        Heat some oil in a saute pan.   When very hot add the rice and stir fry.  Give the rice some time to heat and color up a bit. Add a splash of water only if necessary.  I'll leave this to you but an authentic Jerk has some brown sugar in it, so maybe finish the rice with just a touch of some at the very end.

Meal 2: Corn and Sweet Potato Chowder, Spinach Salad w/ Fresh Radishes, Portuguese Corn Bread
·        Shake the jar of soup well and warm gently. 
·        Dress the salad.

·        Warm the Bread.
