Meal 1: Golden Carrot Soup, Snug Haven Spinach Salad, Spelt and Sesame Loaves
• Yep, golden yellow carrots from Harmony Valley. Gorgeous and delicious. Warm the soup gently.
• Warm the bread.
• Dress the Salad.
Meal 2: Vegetarian Sloppy Joe on Challah Rolls, Sweet Corn Salad, Sweet Potato Salad
• Split and warm the rolls. Warm the Joe in a saucepan, or microwave, really. Make sandwiches, but I like openface best.
• Saute the corn salad in a little butter or oil to heat through.
• Gently fold together the sweet potato salad. Some potato will break up to become part of the dressing - thats good. Adjust the seasoning if necessary and serve at room temp.
For Kate and I, eight years ago this past Autumn our lives came together in a harmonious union of our passions, talents, and ethics - a fulfillment of a vision. That moment would unquestionably not have arrived without my friend and patron Nancy Abelmann. Nancy was the first to approach us about preparing meals for her family. She then recruited the initial nucleus of our first member families. She remained a member and supported the new owner after we sold the Urbana model to move here. I had to ask her to forgive our leaving.
I regret her passing and lament all the years of inspiring others stolen from her by cancer. May our love go out to her family, whom we had the honor of feeding for our first, formative, four years cooking as The Food Nanny of Urbana. We would not be, quite literally, here without her.
