Enchiladas w/ Black Bean Sauce & Parsnip-Roasted Garlic Soup

Meal 1: Butternut Enchiladas w/ Black Bean Sauce and Hominy Succotash 
• Preheat the oven to 350°. Briefly microwave the enchiladas and the sauce ( in the jar). Pour the warmed sauce over the enchis and transfer the dish to the oven. Garnish with additional cheese if you like. Bake for about 15 minutes. 
 • Heat the succotash in a saute pan with a little oil. Toss and stir until heated through and fragrant. 

Meal 2: Parsnip and Roasted Garlic Soup, Potato Bread, Spinach Salad 
• Warm the soup gently. 
• Warm the bread. 
• Dress the salad.
