Lentil Soup and Yellow Split Pea Curry

Meal 1: Lentil Soup, Roasted Tree Farm Beets, Roasted Garlic Potato Bread 
• Heat the soup on the stovetop.
• Warm the bread in the oven.
• Warm the beets in the oven. 10 -20 minutes at 325. Spread them out on a cookie sheet lined with parchment to speed the process

 Meal 2: Yellow Split Pea Curry, Brown Basmati w/Coconut and Spiced Pumpkin Seeds, Romaine Salad 
• Warm the curry gently on the stovetop.
• Heat the rice salad in a sauté pan with a little oil and then a splash of water to heat it through.
• Dress and serve the salad. Try orange juice and a little lime juice with olive oil for a dressing.
