Maybe Our Best Pizzas Yet and Beef Brisket Chili

Meal 1: Escarole, Red Onion and Sausage  Flatbread Pizza, Gitto Farm Mixed Greens w. Red Romaine, Chick Pea and Kumquat Salad.

·        Unwrap it pizzas and redistribute the cheese if necessary to cover it evenly. On a cookie sheet, heat the pizzas at 400° until heated through and the cheese is just browning.  8-10 minutes.
·        Toss and serve the chick peas at room temp.
·        Dress the salad.

Meal 2:  Two Bean Chili w. Shredded Brisket, Yeasted Corn Bread, Spiced Brown Rice w. Sweet Corn.

·        Warm the chili gently. Bring to a simmer, adding water if necessary and adjusting the seasoning.
·        Heat a sauté pan with a little oil or butter.  Add the rice  and allow to heat through, serve.
·        Warm the corn bread.  Our favorite way is to cut it into thick slabs and to fry those pieces in a bit too much butter.  Brown on each side.  about 1 minute per side over medium high-ish.
