Cannelloni and French Lentil Soup

Meal 1: Spinach Cannelloni w. Marinara and Sautéed Beets w. Orange Zest.

·        Mix the spinach filling to combine.  Divide evenly among the crepes and roll them up like cigars.  Transfer to a ovenproof dish.  Microwave briefly. Ditto the sauce.  Top the cannelloni with the sauce and heat at 375 for 7-10 minutes. Serve.
·        Heat a little butter ( or oil) in a sauté pan.  Add the beets and toss to combine, heat through and bloom the seasoning. 1-2 minutes. Season with salt and pepper and serve.

Meal 2:  French Lentil Soup w. Roasted Garlic, Spelt-Flax Bread, Spinach Salad

·        Warm the soup gently. Bring to a simmer, And stir being sure the lightly break up and distribute the roasted garlic cloves.Cjeck the seasoning and serve.
·        Warm the bread.
·        Dress the salad.
