Sweet/Meat Loaves and Sesame Noodles

Meal 1: Sweet Potato or Meatloaves, Glazed Golden Turnips, Spinach Salad

·        Arrange the loaves on a baking sheet.  Heat at 300° for 10-15 minutes to warm.
·        Heat a little butter ( or oil) in a sauté pan over medium heat.  Add the turnips and toss to combine. Allow to heat through. A lid is useful. Toss, season and serve when hot and tender, likely 2-3 minutes.
·        Dress the salad.

Meal 2:  Cold Sesame Noodles, Braised Tofu, Stir Fried Diakon and Spinach

·        In a bowl, very briefly microwave the noodles or set out and allow to come to room temp.  Warm the sauce just a bit, gently in a microwave.  Pour over the sauce over the noodles and mix.
·        Heat a sauté pan with a little oil. Allow it to get very hot and just start smoking.  Separate the spinach from the radish/ carrot.   Add the root veggies to the pan and stir fry. After 1 -2 minutes the veggies will have colored and started to soften a bit. Add a pinch of salt and the spinach.  Stir allowing the spinach to wilt.  Serve. Reduce the pan to medium heat.
·        Shake the tofu very well and add to the hot pan. Allow the sauce to bubble and thicken and simmer 1-2 minutes.  Serve.
