Meal
1: Escarole, Red Onion and Sausage Flatbread Pizza, Gitto Farm Mixed Greens w.
Red Romaine, Chick Pea and Kumquat Salad.

Unwrap
it pizzas and redistribute the cheese if necessary to cover it evenly. On a cookie
sheet, heat the pizzas at 400° until heated through and the cheese is just
browning. 8-10 minutes.

Toss
and serve the chick peas at room temp.
·
Dress
the salad.
Meal
2: Two Bean Chili w. Shredded Brisket,
Yeasted Corn Bread, Spiced Brown Rice w. Sweet Corn.

Warm
the chili gently. Bring to a simmer, adding water if necessary and adjusting
the seasoning.
·
Heat
a sauté pan with a little oil or butter.
Add the rice and allow to heat
through, serve.
·
Warm
the corn bread. Our favorite way is to
cut it into thick slabs and to fry those pieces in a bit too much butter. Brown on each side. about 1 minute per side over medium high-ish.
