Cold Sesame Noodles and Black Eyed Peas w/ Collards

Meal 1: Cold Sesame Noodles, Shaved Pak Choi Slaw, Baked Tofu and Snap Pea Salad.
• NOTICE: The noodle sauce contains peanuts!!!
• Remove the noodles from their dish and reserve, leaving the bulk of the sauce behind. Add a little hot wate to the sauce and stir to thin and loosen it. Add the noodles back and fold together to combine.
• Serve the slaw chilled.
• Toss the tofu with its garnishes and serve.

Meal 2: Black Eyed Peas Stew with Collards and Kohlrabi, Anadama Corn Bread, Arugula and Baby Kale Salad. 
• Heat the stew on the stove top. Allow it to simmer and the collard shreds to turn bright green.
• Warm the bread.
• Dress the salad.

 Menu Notes 

 Hope you all had a safe and uneventful night through the storm. Ours was fairly terrifying as I dashed upstairs to haul our slumbering children to the basement and swirling rains pummeled the house obscuring all visibility. We had several limbs come down, one of which has opened up about 2.5 hours more light on the garden. So, um, thanks! Today is supposed to be the hottest so far, so enjoy the cold noodles, slaw, and tofu with beautiful snap peas. The black eyed pea dish is a nice foil for fresh greens, sweet kohlrabi, and the tail end of last year’s sweet corn. It’s time to use up such items and prepare for this year’s coming harvest. Anadama corn bread is a traditional loaf, hearty by nature, with corn meal, whole wheat, and molasses. Enjoy!
